I've run the following size Dayton wires on a number of E Types I've owned - 15 x 6, 15 x 7, 16 x 7, and 17 x 7. I'm currently using the 17" ones with 245/45 - 17 Dunlop Direzza tires on my '68 ots. The cars do handle, and as importantly brake, much better with the larger tires. There is increased steering effort in a parking lot but nothing to worry about - at speed there isn't much difference, You can run 205/70 - 15 on the stock wheel if you want - I doubt that you'd notice a difference in feel as compared to the 6" wheels. You may have to take the rubber portion of the bump stop off - it's a matter of trying the wheels at full droop. The fouling problems occur primarily at full droop when you put the wheel back on the car or take them off. Once the car is at normal ride height the problem will probably disappear. Anyway I've been running E Types without the rubber for 20 plus years with no issues. With larger/wider tires you may have to remove the metal bump stop bracket. You can squeeze a 9.5" wide tire in the back if you do - I know that you are not going that big!
The extra width of the rim on Daytons is mostly on the outside, so it doesn't create problems with fouling the inner fender well - it's actually the width of the tire that creates any issues.
When you talk about center laced I assume that you are talking about what Dayton refers to a a "Well Laced" wheel? This means that all the spokes are laced to points within the wheel well and don't come out to the edge of the rim. These wheels have bright chrome rims without the spokes. Dayton knows what backspace to put on wider wheels for Jaguar and does it unless you ask for something different.
