Joseph; I am finishing a complete restoration on my 70 2+2, auto with A/C . Take many many pictures of everything and then take some more. They will help greatly on the return trip.
You can do the engine if you want, there are some great books that give you needed help. You can pay others to do the parts of the restoration you are unable to do but for many of us the 'doing' is a big part of the fun.
There are many on this site that can give good advice if you ask
If you have not ripped out your wires yet tag each as to what it is connected to and tag each end. The colors on old wires are not easy to see and knowing where it is attached and where it goes will help with the colors.
